As an international hub, Geneva naturally reflects its diverse cuisine. In addition to these global influences, the city has maintained its culinary traditions, offering delightful experiences for both locals and visitors. So, what are Geneva's must-try culinary specialties?

Traditional dishes in Geneva

Longeole

The city's traditional dish is best enjoyed in winter. It's a sausage made from pork and fennel seeds, served with potatoes cooked in white wine and vegetables.

Lake Geneva fish

Lake Geneva offers a range of surprises, including féras, perches, and pikes, all of which pair wonderfully with the fine wines of the canton of Geneva.

Perch fillets are especially emblematic of Geneva. Typically fried and served with potatoes and a choice of tartar or meunière sauce, they are a favorite among both locals and tourists.

Geneva cardoons

Cardoons might not be a dish on their own, but they are a vegetable that, although somewhat forgotten in other countries, accompanies many dishes in Geneva. With a flavor similar to artichokes, cardoons can be prepared in various ways, such as au gratin with a béchamel sauce.

Geneva fondue

Fondue isn't exclusive to Geneva, but the city has its own variant with slightly different seasoning and spices. Additionally, the white wine used for the fondue may be more characteristic of the Geneva region.
