About caretakers how do we go about

employing a care take who do we contact or is "word of mouth" we when we are settled in Cuenca we do plan to go to Argentina and Brasil so we would need someone to look after our home/apt/condo?

Pele,
Your best bet is a contact that you have in country. Once you get here, you will meet many, wonderful people, maybe like mercy.
You will have no problem what so ever finding an honest person to entrust your home with. This country is filled with service people you can rely on.
