I want to purchase a bicycle from a larger sized shop with knowledgeable staff. Where can I find such a shop? I see lots of small hole in the wall shops but that is not my preference.

I don't know if I want a mountain style bike or a racing style bike for riding around HCMC.

Can someone suggest a good bike shop?

Well if you go there, then 2 blocks south on Nguyen Tri Phuong is Jett Cycles, they have all kinds of bikes, racing bikes with good components too.

And continue 2 more blocks down to Vo Van Kiet, there is another nice bike store. I don't know the name, but it is in this building marked in the google map:
